50mL booze cupboard gin
20mL fresh lemon juice
15mL sugar syrup
15mL egg white or aquafaba
60mL grapefruit soda

Add gin, lemon, sugar syrup and egg white to a cocktail shaker and shake for about 5 seconds to emulsify the egg white. Open up the shaker and add the ice, shake again until canister is frosty. Strain into a chilled collins glass. Slowly top with your soda water.
