
It all started with a trip to Port Douglas, a distaste for brown liquor, and an impulsive purchase of a bottle of Bombay Sapphire.
The love of Gin was born for us, even though we were forcing down bombay with schwepps Indian Tonic, we thought we were at-least sophisticated enough to add orange instead of lemon or lime. Little did we know we were opening ourselves up to a whole new world.
Our palettes changed with every trip to a new distillery, every masterclass we attended, every cool bottle we found. But it wasn't until our trip and board at The Portobello Road Distillery in Notting Hill, London.
Three nights, many cocktails and an amazing masterclass lead by a smart mouth South Australian who had us feeling right at home solidified our love for the drink and we decided this was something we had do.
We would always say to each other in some variation of; "I can't wait until we have a distillery, where we can invite our mates after hours, with boarding so they can all stay" and it was always a future thing. We never envisioned ourselves being distillery owners while we were in our 20's / 30's. Then covid. The lost time felt too real. In 2021 we were travelling down the coast and finally felt relaxed when I said to Tim "why aren't we doing this now?" and when Tim (who usually has an answer back to everything I say) was speechless, I knew we were in for it.
So we started, we knew our strengths, Tim had a real interest in the mathematics of distilling, accounting, logistics and product development, whereas I have worked in marketing and design for over 10 years, we're a match made in heaven to start a business! We've spent over a year learning, developing the business operation, brainstorming, designing, moodboarding, drinking, researching and loving every minute of it. 10-20 iterations of the recipe later we were happy with the product, we couldn't believe it. We developed our OWN Gin (what the fuck???)
